Yes for dry storage and packing, no for refrigeration. A container is a dry, rodent-tight room, not a cooler. Cured onions, garlic, winter squash and sweet potatoes hold well in a vented box. Anything that needs cold needs a refrigerated unit, which is different equipment and not what we keep in the yard.
The idea sounds right. A root cellar is a dark, enclosed space that holds crops through winter, and a container is a dark, enclosed space. So people load a fall harvest into one, close the doors, and open it in December to find soft squash and sprouted onions.
The reason is that a root cellar is not doing its work by being enclosed. It is doing its work by being underground, where the earth holds it near a steady cool temperature and a steady humidity all winter with no equipment at all. A container sits on top of the ground with nothing between the crop and the weather but a sheet of steel.
Steel is the opposite of thermal mass. It heats fast in sun and gives that heat back fast at night. An unmodified box tracks the outside temperature and then exaggerates it, running hotter than the yard on a sunny afternoon and cooling off hard after dark. That daily swing is what ruins stored produce, because every swing drives condensation and every drop of condensation is a place for rot to start.
So the honest framing is this. A container is excellent at dry, secure and rodent-tight. It is not a climate. Match the crop to what the box actually provides and it works well. Ask it to be a cellar and it will disappoint you.
The crops that do best are the ones that want dry air and moderate temperatures rather than cold and damp. Cure them properly first, because curing is what makes the difference, not the building they go into.
The crops to keep out are the ones that want cold and humid: potatoes for winter, apples, carrots, cabbage, leafy greens and anything harvested for a market next week. Those want real refrigeration, and no amount of venting turns a steel box into that.
Produce respires. It gives off heat and moisture the entire time it sits, and in a sealed box that moisture has nowhere to go. It rides the warm air up, meets the cold ceiling overnight, and comes back down on your crop as water. Growers call it container rain and it is the single most common way a first season of container storage goes wrong.
Venting fixes the mechanism rather than the symptom. Vents low on the walls and high near the roof let cool air enter at the bottom and push warm damp air out the top on its own, no fan required. Add a fan and you can move a good deal more, though that means power, which is its own project.
The rest is stacking. Pallets under everything so air passes underneath, slotted crates rather than solid bins, gaps between stacks and a few inches off the walls. A tight wall of boxes with no air path through it will spoil in the middle while the outside looks perfect.
Storage is the question people ask. Packing is usually where the container earns its money.
Every market grower runs out of clean, dry, lockable space at exactly the wrong time of year. A container at the edge of the field becomes the place where crates live, where the wash table and scales are out of the weather, where row cover and irrigation fittings stop disappearing, and where the canopy and tables for Saturday market load out of on Friday night. Doors that seal and a welded lockbox mean the market cash box and the good pruners are not sitting in an open shed.
It is also the staging point for the harvest itself. Pick into the shade of the box, sort and pack there, then move what needs cold into cold. Produce spends its shortest life in the field heat, so cutting the walk between the row and a shaded packing surface is worth more than most of the equipment people buy first.
Refrigerated shipping containers exist. They are a purpose-built machine: insulated walls, a refrigeration unit at one end, and a serious electrical load to keep it running. They are a different piece of equipment than the dry storage containers in our yard, and they are not something we stock.
The other route growers take is building a cold room inside an ordinary container: insulate the interior, seal it, and install a cooling unit sized to the space. That is a real project and it is not a storage container any more. Two things to know before you start down it. Our electrical scope stops at the rough-in stage: the panel, the outlets and the switches go in, and the final hookup plus inspection belong to a licensed electrician. Permits are not something we file either, so the code side sits with you, that electrician and your locality.
The state building code in Virginia leaves storage containers alone, and the exemption turns on what the box is used for rather than on the box itself. Keep it as storage and the answer stays simple.
